Neither species is better for espresso. They solve different problems, and most classic espresso is a blend of both.

What Arabica Contributes to an Espresso Blend

Arabica is the flavour engine of an espresso blend. Higher natural sugar content produces sweetness and better browning through the roast, and higher titratable acidity produces the citrus, floral, and stone-fruit notes that survive into the cup.

Indonesia Specialty Coffee grades all Arabica lots against SNI 01-2907-2008, and ships Grade 1 specialty lots cupping at 83 to 85+ SCA points, verified by a Q-grader before release. Gayo Arabica grows at 1,400 to 1,800 m in Aceh; Bali Kintamani sits at 1,200 to 1,700 m in Bangli Regency.

Here is the part most blend guides miss. Indonesian Arabica is not interchangeable with washed Latin American Arabica in an espresso blend, because of processing. Gayo and Mandheling lots are semi-washed or full-washed at Step 1, then wet-hulled (Giling Basah) at 35 to 40% moisture at Step 2. Wet-hulling strips acidity and builds a heavy, low-toned body, so a Sumatran Arabica base already sits halfway toward Robusta’s texture. Blends built on Sumatran Arabica need noticeably less Robusta to reach the same body than blends built on a washed Colombian or Brazilian base.

Roast Arabica to a medium level for espresso. Push it darker and the acidity and aromatics you paid a premium for are the first things to burn off.

What Robusta Contributes: Crema, Body, and Cost

Robusta is the structural component. It delivers three things Arabica cannot supply at the same price: a thick and persistent crema, a fuller body that survives milk, and roughly double the caffeine.

The crema advantage is chemical. Robusta carries higher levels of chlorogenic acids and proteins, which act as surfactants and hold the carbon dioxide released during extraction in a denser, longer-lasting foam. That is where the tiger-striping in traditional Italian espresso comes from.

ISC sources Robusta Lampung from West Lampung and Tanggamus in southern Sumatra, growing at 100 to 800 m. Lampung Province supplies roughly 21% of Indonesia’s total Robusta output, second only to South Sumatra. Grade specifications matter more here than most buyers expect:

  • ELB (Extra Large Beans): screen size 15 to 19, bean count 350 or 450 per 100 g, moisture ≤13%
  • Standard commercial lots: screen size 14 to 18, moisture ≤13%, defect value up to 45
  • EK1 grades: defect value 11 to 80 under SNI 01-2907-2008

Screen size uniformity is what separates a Robusta that roasts cleanly from one that scorches. ELB lots roast far more evenly than mixed-screen commercial Robusta, which is why they cost more and why they belong in a specialty espresso blend.

Espresso Blend Ratios That Actually Work

There is no universal ratio. There are ratios matched to what the espresso has to do on the bar.

Start at 80:20 and adjust in 5% steps. Increase Robusta if the shot disappears in a 12 oz latte. Decrease it if the finish turns rubbery.

One correction worth making: roasters who dismiss Robusta as bitter are usually describing a roasting error, not a species. Arabica and Robusta differ in density and moisture, so a blend roasted together as a single batch forces a compromise profile that overcooks one and underdevelops the other. Roast the two components separately, then blend after roasting. The bitterness complaint largely disappears.

How to Spec an Espresso Blend from an Indonesian Supplier

Sourcing both blend components from one country means one shipment, one set of export documents, and one point of accountability if a lot arrives off-spec.

  1. Species and origin: Gayo Arabica, Bali Kintamani Arabica, Lampung Robusta
