Indonesians shorten the name to kopsuren. The customer stirs the layers together before drinking, which is half the appeal and the reason the drink is served in clear glass.
Kopi Temu introduced the modern version in 2015. Kopi Kenangan, founded two years later, scaled it into a chain now moving roughly 1,500 tonnes of Indonesian coffee a year. Google gave the drink its own Doodle, and Barista Magazine tracked its spread abroad in April 2026.

What Gula Aren Does to the Cup
Gula aren is sap tapped from the flower stalk of the sugar palm, Arenga pinnata, then boiled down until it crystallises into blocks or reduces to a thick syrup. That long reduction is where the flavour comes from.
Treat gula aren as a flavouring ingredient rather than a sweetener. It contributes caramel, toffee, molasses, and a faint smoke that refined sugar cannot produce, and it contributes them loudly.

The coffee in a kopi susu gula aren competes against roughly 30 ml of palm sugar syrup and 120 ml of milk. It needs weight and bitterness that survive that, which is why Robusta rather than delicate Arabica is the default base across Indonesia.

Mandheling is the Arabica exception, and our own catalogue says so: Grade 2 and Grade 3 are both listed as suitable for mixed drink materials. Mandheling is semi-washed cherry, then wet-hulled (Giling Basah) at 35 to 40 percent moisture, and that hulling step is what gives it the low acidity and heavy body the drink needs. Robusta Lampung is natural (dry) process cherry, also wet-hulled.

Roast Level and Extraction Spec
Take these lots to a medium or medium-dark roast. Light roasting exposes the sharp, herbal edge undeveloped Robusta carries, and gula aren does nothing to hide it. Push past medium-dark and you trade cocoa for ash. Lampung Robusta sits in a narrower window than most Arabica, so record your charge temperature and airflow.
For extraction, 18 g in and 36 g out in 25 to 32 seconds is a working starting point. Robusta extracts faster than Arabica of the same roast colour, so if bitterness spikes, coarsen the grind before you shorten the shot.
One thing we tell every buyer taking Indonesian green coffee for the first time. Wet-hulled beans look wrong. They arrive pale, blotchy, sometimes with a bluish cast, and roasters used to washed Central American lots occasionally flag a sample as defective over the colour alone. That appearance is the hulling method, not damage. Judge the lot on defect value, moisture, and the cup instead.
How to Make Kopi Susu Gula Aren
Prepare your syrup first. Everything else takes a minute.
- Make the syrup. Heat equal parts liquid gula aren and water gently until smooth, then cool completely. Refrigerate it, and batch a week at a time for service.
- Brew the coffee. One espresso shot, or 30 ml of very strong manual brew.
- Build the glass. Pour 30 ml of syrup into the base, fill with ice, add 100 to 120 ml of cold fresh milk.
- Float the coffee. Pour over the back of a spoon so the layers hold.
- Stir before drinking. The layers are for the photograph. The drink is the mix.
Adjust syrup down before you adjust coffee up. Most cafés over-sweeten this drink on the first pass.
