That gap comes from altitude, volcanic soil, and above all the hulling method used after harvest. Indonesian Coffee Regions at a Glance
Indonesian coffee processing runs as two steps, and reading a region without both of them tells you very little. Step 1 is the cherry method: full-washed, semi-washed, natural process, or honey process. Step 2 is the hulling method: dry-hulled at roughly 12% to 13% moisture, or wet-hulled (Giling Basah) at 35% to 40%.
That second column is what splits the map, and it is the first thing you should check on a spec sheet. Sumatra, Sulawesi, and Flores wet-hull. Java and Bali dry-hull.

Every lot in the table is graded against SNI 01-2907-2008. Grade 1 Specialty requires a defect value of 11 or lower and moisture at or below 12.5%, and cups at 82 to 88 SCA points. Altitude bands outside Gayo and Bali reflect published origin ranges rather than a single ISC lot, so confirm them against current lot data before you contract.
Sumatra: Gayo, Mandheling, and Lintong
Sumatra supplies the profile most buyers picture when they hear Indonesian coffee: very low acidity, heavy syrupy body, and an earthy, cedar-spiced depth. Indonesia ranks fourth worldwide for coffee production by volume according to the International Coffee Organization, and Sumatra carries most of that volume. Wet-hulling is why. Parchment comes off while the bean still holds 35% to 40% moisture, then the exposed bean finishes drying to export level.
Arabica Gayo grows across Aceh Tengah, Bener Meriah, and Gayo Lues on volcanic andisol soils around Takengon, at 1,400 to 1,800+ metres. Varietals run Typica, Bourbon, Catimor, Tim Tim, Gayo 1, and Gayo 2. Higher lots add a cleaner citrus lift on top of the chocolate base. Main harvest falls June to August, with the full season running May to September.
Sumatra Mandheling comes from North Sumatra around the Bukit Barisan range and Lake Toba, and it is the heaviest of the three: cocoa, sweet tobacco, and a coating mouthfeel with acidity almost fully resolved. Sumatra Lintong, grown in North Tapanuli near Lake Toba, sits slightly cleaner and more structured than Mandheling at similar body.
One thing we tell every first-time Sumatra buyer. Wet-hulled lots arrive a bluish or opal green, swollen, and irregular in shape, and buyers used to washed Central Americans sometimes flag that appearance as a defect. It is not. That colour and shape are what the process produces, and defect grading is done on count against SNI, not on appearance.
Java: The Estate Origin That Is Dry-Hulled
Java is the exception that clarifies the rule. Indonesian coffee began here on Dutch colonial estates, and that estate tradition kept Java on full-washed, dry-hulled processing while Sumatra went the other way.
The result is a cup that reads nothing like Sumatra: clean, sweet, molasses and cocoa, mild acidity, and a medium to full body without the earthy floor. For roasters, this matters more than flavor. Java and Bali behave like conventional washed Arabica in the drum, while wet-hulled Sumatra needs a lower charge temperature because of its lower bulk density and open cell structure.

Bali Kintamani and Flores Bajawa
These two are the brightest Indonesian origins on the table, and both work where Sumatra is too heavy for your menu.
Bali Kintamani grows at 1,200 to 1,700 metres on the volcanic slopes around Mount Batur, mainly through smallholders in Ulian Village, Bangli Regency. Farmers intercrop coffee with citrus and vegetables under the Subak Abian system, and the cup carries orange and lemon aromatics, molasses sweetness, bright acidity, and a medium body. Screen size runs 15 to 19. Kintamani holds Indonesia’s first coffee Geographical Indication.
Flores Bajawa grows on the Ngada plateau at 1,200 to 1,800 metres in volcanic ash soil, usually under shade. Bajawa cups nutty and caramel-forward with chocolate and a clean finish, sitting between Java’s clarity and Sumatra’s weight. Flores is traded in far smaller volumes than Sumatra, which makes it useful for a rotating single-origin slot and harder to secure at scale.
Sulawesi Toraja
Sulawesi Toraja is the balance point of Indonesian coffee: Sumatran body without Sumatran earthiness.
Toraja grows in the South Sulawesi highlands at 1,400 to 2,100 metres, with the Sapan lots on the slopes of Mount Sesean reaching the top of that band. Farmers intercrop with spice trees, and the cup shows warm spice, cocoa, tropical fruit, and a full, rounded body with medium acidity. It is semi-washed and wet-hulled like Sumatra, but the extra altitude holds more acidity and aroma through the process.
