Mold and Mycotoxins: Where the Real Risk Sits
The health concern is not the coffee. It is what grows on coffee that has taken on moisture. Aspergillus and Penicillium produce mycotoxins, and the one that matters here is Ochratoxin A (OTA), a possible human carcinogen linked to kidney damage in animal studies. Aflatoxins are secondary, Aflatoxin B1 the known carcinogen among them.
OTA-producing fungi are more demanding than ordinary spoilage mold. Aspergillus ochraceus needs roughly 0.77 to 0.85 aw before it produces OTA, well above anything correctly stored coffee reaches. Contamination happens at origin through incomplete drying or humid warehousing, not in your kitchen cupboard. Roasting reduces OTA but does not remove it, because the molecule is heat stable.

Stale vs Spoiled: How to Tell Which One You Have
Most coffee thrown away as expired is stale, not spoiled, and the two fail in completely different ways. Stale coffee has lost volatile aromatics to oxygen. Spoiled coffee has grown something.
Discard the batch if you see any of these:
- Fuzzy white, green, or black patches beyond the normal oil sheen on dark roast
- Grounds that clump, feel damp, or stick to the scoop
- A musty, sour, or basement smell rather than a flat one
- Visible moisture inside the bag or container
Stale coffee looks entirely normal. It smells like weak cardboard and brews thin and bitter. How to Store Coffee So It Never Gets There
Storage failure, not age, turns coffee into a health question. The fix is the same at both ends of the chain: keep water out.
For roasted coffee at home:
- Opaque airtight container, cool dark cupboard, away from the stove
- Whole bean over pre-ground, since ground coffee stales far faster
- Never the fridge, where condensation drives moisture into the beans
For green coffee in a roastery:
- Warehouse humidity at 50% to 60%, temperature at 20°C to 25°C
- Sacks palletized off concrete floors, which wick moisture upward
