Enrekang Regency sits directly south of Tana Toraja in South Sulawesi’s central highlands. Coffee farms in Enrekang are planted at 1,200 to 1,800 metres above sea level on volcanic soil with strong mineral content. The tropical highland climate brings consistent rainfall and cool temperatures that slow cherry maturation, allowing the bean to accumulate density before harvest. How Kalosi Coffee Is Processed

Sulawesi Kalosi uses Indonesia’s two-step processing system.

Step 1 — Cherry processing: Most Enrekang lots are Full-washed: pulped and partially washed, with mucilage remaining on the bean during drying. Semi-washed lots from select producers are also available.

Step 2 — Hulling: Parchment is removed while the bean is at 13-14% moisture, using the dry-hulled method. This is the step that produces Kalosi’s characteristic heavy body and low acidity.

Kalosi vs Toraja: What Is the Difference?

Kalosi and Toraja are two separate Sulawesi origins that traders routinely group together. You will see the combined label “Sulawesi Toraja Kalosi” on many price lists. That label mixes two distinct growing regions.

The real difference is altitude and geography. Toraja coffee grows on the Toraja plateau at 1,400 to 1,900 metres, producing a heavier-bodied cup with lower acidity and pronounced dark fruit and chocolate notes. Kalosi, grown in Enrekang south of Toraja at 1,200 to 1,800 metres, tends to carry slightly brighter acidity, more floral character, and a spice-forward complexity.
